How to Make Bacon Jam
Step 1. Cook over medium high heat for 7-10 minutes until the bacon is cooked through and slightly crispy. Remove bacon from pan to a plate lined with a paper towel.
Step 2 – Add the diced onions to the pan with the bacon grease. Sauté for approximately 4-5 minutes until the onions are translucent.
Step 3 – Mix the bacon back into the pan, stirring occasionally in the sherry vinegar, balsamic vinegar, brown sugar and water.
Step 4 – Bring the mixture to a low boil and cook for 10 to 15 minutes until the mixture is thick and dark.

- 12 ounces Thick Cut bacon chopped
- 2 Sweet Onions diced into small pieces
- 1/4 cup Sherry Vinegar
- 1 Tablespoon Balsamic Vinegar
- 1/2 cup Brown Sugar
- 1/2 cup Water

- Use a slotted spoon to move the bacon from the pan to a plate lined with a paper towel.
- Remove all the bacon grease from the pan except for approximately 1 tablespoon.
- Add the diced onions to the pan with the bacon grease.

- Mix the bacon back into the pan and stir in the sherry vinegar, balsamic vinegar, brown sugar and water.
