Instant Pot Pork Loin Roast results in a tender and delicious pork roast with not a lot of work. The pork roast is tender, juicy and flavorful and easy to make in the instant pot.
I love to make a pork roast on Sunday to start the week off with a good meal that everyone enjoys. But now, I can easily make this pork roast any day of the week because of how quickly the instant pot cooks it. Instant Pot Recipes has been a game changer for my family.
You can easily add in vegetables to complete this meal. It really is a simple meal idea and the pork roast shreds so easily. Serve as is or it is perfect to meal prep for the week. We love that it also makes a tasty gravy to serve over everything.
What Cut of Meat Should I Use?
When make this Instant Pot Pork Roast recipe we wanted it to be a traditional type of roast that we normally ate with carrots and mashed potatoes. For this recipe we recommend a Pork Loin Roast, Pork Butt or a Pork Shoulder Roast.
- Pork Loin Roast – The Pork Loin is a lean part of the pig so it can be easily overcooked if you are slow cooking it. This cut of roast has more of pork chop texture that usually served in pieces instead of shredding the pork roast.
- Pork Shoulder Roast – Pork Should is probably the one we cook the most. It has more fat on it and is perfect for slow cooking. It is great for shredding if you are making tacos or for meal prepping. This is a tender and juicy pork roast.
Ingredients:
- Pork Roast
- Olive Oil
- Salt
- Pepper
- Carrots, peeled and cut into large pieces
- Onion, Cut into large pieces
- Chicken Broth
- Minced Garlic
- Italian Seasoning
- Cold Water
- Cornstarch
How to Make Pork Roast in the Instant Pot:
- Step 1 – Turn the Instant Pot on the sautรฉ setting. Spread the olive oil out onto the bottom of the instant pot insert.
- Step 2 – Season the pork roast with the salt and pepper and then brown the pork roast on both sides.
- Step 3 – Remove the pork from the instant pot and use a wooden spoon to get all the brown bits off the bottom of the instant pot insert.
- Step 4 – Add the chicken broth, browned pork roast, carrots, minced garlic and Italian seasoning to the instant pot.
- Step 5 – Seal and cook on high pressure for 35 minutes.
- Step 6 – After the cook time, allow the pressure to release naturally from the instant pot for 10 minutes.
- Step 7 – Then do a quick release to release the remaining pressure from the instant pot.
- Step 8 – Remove the pork and carrots. Switch the instant pot to the sautรฉ setting.
- Step 9 – Combine the cold water and cornstarch together in a small bowl.
- Step 10 – Whisk the cornstarch mixture into the instant pot and heat for 2-3 minutes until the sauce has thickened to a gravy consistency.
- Step 11 – Slice the pork on a cutting board and serve the pork and carrots topped with the gravy from the instant pot. Enjoy!
How long to Cook Pork Roast in Instant Pot:
After browning the pork roast in the instant pot remove from the instant pot with all the brown pieces. Then add the pork roast, vegetables and seasoning to the instant and seal.
Cook the pork roast for about 30 minutes to 35 minutes and allow for the instant pot to do a natural release for about 10 minutes. After doing a quick release, remove the pork roast and vegetables and make the gravy.
Whisk in the cornstarch slurry to thicken the gravy. Making the pork roast in the instant pot takes less than time than making in the slow cooker or in the oven.
Why is My Pork Roast Tough in Instant Pot?
The reason your pork roast might be tough is because that it hasn’t cook long enough. After the pork roast has cooked for 35 minutes and it is still tough, then you might need to cook longer.
Cooking the pork loin doesn’t take long, but just make sure it is cooked before serving.
Pressure Cooking Pork Roast Tips:
- Adding Salt to the Pork Loin – Make sure to really rub in the salt and other seasoning into the pork. This helps to tenderize the pork while it is cooking.
- Frozen Pork Roast โ You can add frozen pork roast to the Instant Pot. Just adjust the time accordingly for the frozen meat.
- Crock Pot Pork Roast โ This pork roast would be great in the slow cooker pot. Slow cooking pork roast is jut as delicious and perfect to start it first thing in the morning.
- Searing the Pork Roast – We recommend searing the pork roast before cooking it. This helps with locking in the juices and cuts down on cooking time.
- Make in Advance โ This pork roast recipe makes the perfect freezer meal. You can place the ingredients in a freezer bag. Grab from your freezer to the instant pot.
- Cut the veggies into large pieces โ Since the beef requires a longer cook time, cut all the vegetables into larger pieces so that they donโt get too soft while cooking.
- Donโt use Flour for the Gravy โ I have found that cornstarch instead of flour works best to make the gravy for this roast. Cornstarch is flavorless so it thickens without changing the flavor of the droppings from the instant pot.
Can I Freeze This?
Yes, this pork roast can easily be frozen to be used for another meal. Place your leftovers and a freezer safe container or ziplock freezer bag and store in the freezer. We recommend using it within 3 months of storing.
When you are ready to serve again, thaw in the refrigerator overnight. Reheat in the microwave for another easy meal.

Cooking the pork roast in the instant pot allows you to cook a complete meal all together. But you can also make your vegetables separately if you prefer. My family prefers mashed potatoes, so I usually make them separately.

How to Store Leftovers:
Refrigerate the leftovers in an air tight container for up to 3-5 days or you can freeze the leftovers for up to 3 months.
This pork roast makes the best leftovers. You can use the shredded pork roast in many different ways. The flavor of the pork roast after marinating in the gravy overnight gives it so much flavor.
