This easy no bake recipe is the perfect dessert to make for any occasion. The layers of chocolate, ice cream and cool whip makes this dessert so rich and decadent.

Ingredients

Ice Cream Cake ingredients - ice cream sandwiches, chocolate syrup, caramel sauce, cool whip
  • Ice Cream Sandwiches
  • Chocolate Syrup or you can use Hot Fudge Sauce
  • Caramel Sauce
  • Cool Whip (or you can use homemade whipped cream)

Variations Ideas

  • Ice Cream Sandwiches – We used vanilla ice cream sandwiches in this easy dessert, but you can use other flavors such as chocolate ice cream or strawberry ice cream. Have the kids pick their favorite.
  • Syrup – Feel free to change or add your favorite flavors to this dessert. You can top with chocolate sauce, magic shell topping, or strawberry sauce.
  • Top of the Cake – This would be the perfect birthday cake to make for your next birthday party. Top with chocolate chips, sprinkle, Reese’s Pieces candies or chopped candy bars, chopped nuts such as almonds, pecans or peanuts or Oreo Cookies. We have even topped with mini M&M and chopped peanut butter cups.

Step by Step Instructions

  • Step 1 – First remove the wrappers from all the ice cream sandwiches. You need to move fast because ice cream melts.
  • Step 2 – Then lay 3 ice cream sandwiches side by side on a cake pan or baking dish.
  • Step 3 – Next drizzle with the caramel and the chocolate on the layer of ice cream sandwiches.

  • Step 4 – Then lay another 3 ice cream sandwiches on top going the the other direction. Drizzle with more caramel and chocolate on the second layer. Continue this process 2 more times so it is four ice cream sandwiches high.
  • Step 5 – At this time, if the ice cream sandwiches start to melt, then place in the freezer for 30 minutes to an hour.
  • Step 6 – Now it’s time for the icing on the cake with whipped topping. I think this might be my favorite part!  “Ice” the cake with the cool whip.

  • Step 7 – Then drizzle the caramel and the chocolate on top allowing it to drip down the sides.
  • Step 8 – Freeze the cake for at least 2 hours and then I allow the cake to set at room temperature for at least 15 minutes to soften some so it’s easier to cut and then it’s ready to serve.

Recipe Tips

  • Layering Cake – You want to work fast when layering the cake as the ice cream sandwiches will begin to melt. But you want the ice cream sandwich to softened as it makes it easier to press the mixture together.
  • Baking Dish – We recommend using a deep baking dish when making this treats because of the many layers.
  • Freeze – After preparing, make sure to allow the dessert to freeze for at least 2 hours before serving.

Serving Suggestions

For best results, we recommend removing the ice cream cake about 20 minutes before serving so it is easier slicing the cake. We recommend running a sharp knife under hot warm to warm the knife. This helps to make clean slices into the cake.

    This cake was amazing! I made it for my husband’s birthday, with family over and it was a hit. I made it in a 9×13 cake pan and there are literally 2 pieces left! So easy to make but looks like it took all day. Best part is my Husband is diabetic, so ice cream is largely off the table, but with this, per the nutritional info here, each piece is only 28 carbs. So yes, it doesn’t probably fit a diabetic snack but it’s his birthday and didn’t break the bank! Thanks for this recipe
