What is Strawberry Crunch Cake?
Strawberry Crunch Cake is made of two layers of strawberry cake that is centered with a cheesecake layer. The cake is then topped with a Oreo cookie crumbs that is mixed with strawberry gelatin.
If you love strawberry and cheesecake it is the combination of the two that makes up this Strawberry Crunch Cake. The ingredients and the process may look long, but trust me it will be worth it.

Ingredients:
For the Strawberry Cake Layer:
- Strawberry Cake Mix – Plus ingredients needed to prepare the cake based on the box instructions.
For the Cheesecake Layer:
- Cream Cheese, softened at room temperature
- Granulated Sugar
- Cornstarch
- Eggs
- Vanilla Extract
- Heavy Whipping Cream
For the Frosting:
- Cream Cheese, softened at room temperature
- Powdered Sugar, sifted
- Unsalted Butter
- Vanilla Extract
For the Crumb Topping:
- Golden Oreos
- Strawberry Gelatin Mix
- Whipped Topping, thawed
How to Make Strawberry Shortcake Cheesecake:
For the Strawberry Cake Layer:
- Prepare oven and Pan – Preheat the oven to 350 degrees F and spray 2 9-inch round cake pans with a non stick cooking spray.
- Make Strawberry Cake – Then prepare the strawberry cake mix batter based on the instructions on the back of the box. Add ingredients to a bowl and mix.
- Divide Strawberry Cake batter into pans – Pour the batter evenly into the 2 9-inch cake pans.
- Bake Strawberry Cake – Bake for 24-28 minutes until a toothpick inserted into the middle of the cakes come out clean.
- Cool Strawberry Cake – Allow the cakes to cool completely on a cooling rack while you prepare the cheesecake layer.
For the Cheesecake Layer:
- Prepare Cheesecake Pan for baking – Reduce the oven temperature to 325 degrees F and line the bottom of a 9-inch spring foam pan with parchment paper and spray the sides of the pan with a non stick cooking spray.
- Beat Cream Cheese, heavy cream and vanilla – Using a hand held mixer or stand up mixer, beat the cream cheese until smooth and creamy. Then add in the heavy whipping cream and the vanilla extract. We beat at high speed.
- Add in Eggs – Reduce the speed on the mixer to low and then slowly add in the eggs one at a time until they are all combined.
- Mix in sugar and cornstarch – Keep the mixer on low and then slowly add in the sugar and cornstarch. Increase the speed on the mixer and mix for 2-3 minutes until smooth.
- Bake Cheesecake – Pour the cheesecake batter into the springform pan. Bake at 325 degrees F for 40 minutes. Then turn the oven off, do not open the door and let the cheesecake sit in the oven for an additional 20 minutes.
- Freeze Cheesecake – Allow the cheesecake to cool on a wire rack and then place the cheesecake in the freezer for 1 hour.
For the Frosting:
- Beat cream cheese and butter – In a large bowl, beat the cream cheese for the frosting until smooth. Then add in the butter and continue to mix until creamy.
- Mix in powdered sugar – Gradually add in the powdered sugar (1 cup at a time), mixing between each addition until smooth.
- Stir vanilla in – Then stir in the vanilla extract.
For the Crumb Topping:
- Crush Oreos – Add the Oreos to a food processor. Gently pulse until the Oreos are coarse crumbs.
- Coat Oreo crumbs with whipped topping and gelatin – Put the Oreo Crumbs into 2 separate bowls. Mix 1 bowl of Oreo crumbs with the whipped topping and gelatin mix. Mix until the crumbs are evenly coated (using a fork works best).
- Stir remaining ingredients – Then pour this mixture into the other bowl of Oreo crumbs and gently stir them together.
Assemble the Cake:
- Remove the round portion off the cake – Cut the round portion of the cakes off the top of the cakes with a serrated knife to make the cakes level.
- Top 1 cake with cream cheese frosting – Put 1 of the strawberry cakes on a serving platter or cake stand. Then top it with the cream cheese frosting.
- Remove cheesecake from pan – Carefully remove the ring from the springform pan and flip the cheesecake inside down onto the frosted layer of the strawberry cake.
- Layer on frosting on cake – Then remove the bottom of the spring foam pan and the parchment paper. Top the cheesecake layer with cream cheese icing as well.
- Top with other strawberry cake – Place the last strawberry cake on top and evenly spread the remaining frosting on the top and the sides of the cake.
- Add cookie crumble topping – Then use your hands to press the crumble around the sides and on the top of the cake. Note: you will want to add the crumble immediately so that it will stick to the cream cheese icing.
- Refrigerate then Serve and Enjoy – Store the cake in the refrigerator until ready to serve!
Strawberry Crunch Cake Tips:
- Oreo Cookie Crumbs – Make sure that the cookies are crumbled into large pieces, you do not want them to be in crumbs.
- Add Crumble Immediately – You will want to add the crumble immediately so that it will stick to the cream cheese icing.
- Cake Topping – When the cake bakes in a round cake pan, there is a round arch on the cake. Remove this before laying the frosting and then cheesecake.
- Cheesecake – When mixing the cheesecake don’t overmix. This cause the cheesecake to fluff and break during baking.
- Spreading the Frosting – To easily spread the frosting on the cake layers, use a offset spatula. This allows the frosting to smooth and evenly frosted. You can also use a rubber spatula or a knife.
- Freezing Cheesecake – Make sure to freeze the cheesecake. This give it a firm foundation when layering the cakes and frosting.
How do I Crush the Oreos:
To crush the cookies, we recommend using a food processor. The food process works really well and it doesn’t make a mess. If you do not have a food processor, place Oreos in a zip lock and use a rolling pin to crush the Oreos.
Make sure to not crush them to small. You want the pieces to be large.
How to Serve Strawberry Shortcake Cheesecake:
There are many different ways to serve this beautiful cake. These are some that we recommend:
- A Scoop of Vanilla Ice Cream
- Top with Whipped Cream
- Serve with a Side of Fresh Strawberries and Cool Whip
How to Store:
To store any leftovers, place in the refrigerator covered with plastic wrap. The cake will last up to 3 days.
Can this Cake be Frozen?
We do not recommend freezing this cake. Because of the frosting, this cake does not freeze well.
Variations and Additions:
- Change the Cake – You can use a different flavor of cake. You can use white or vanilla cake and it still will come out amazing.
- Add in Food Coloring – For a different coloring for the frosting, you can use food coloring instead of gelatin.

For the Cheesecake Layer:
- 16 oz cream cheese softened at room temperature
- 1 cup Granulated Sugar
- 2 Tbsp cornstarch
- 3 large Eggs
- 1 Tbsp Vanilla Extract
- 1/4 cup Heavy Whipping Cream
For the Frosting:
- 2 8-oz packages of cream cheese, softened at room temperature
- 6 cups powdered sugar sifted
- 1 cup unsalted butter
- 2 tsp Vanilla Extract
For the Crumb Topping:
- 36 Golden Oreos
- 3 oz Box of Strawberry Gelatin Mix
- 1/4 cup whipped topping thawed
Instructions
For the Strawberry Cake Layer:
- Preheat the oven to 350 degrees F and spray 2 9-inch round cake pans with a non stick cooking spray.
- Then prepare the strawberry cake mix batter based on the instructions on the back of the box.
- Pour the batter evenly into the 2 9-inch cake pans.
- Bake for 24-28 minutes until a toothpick inserted into the middle of the cakes come out clean.
- Allow the cakes to cool on a cooling rack while you prepare the cheesecake layer.
For the Cheesecake Layer:
- Reduce the oven temperature to 325 degrees F and line the bottom of a 9-inch spring foam pan with parchment paper and spray the sides of the pan with a non stick cooking spray.

- Then add in the heavy whipping cream and the vanilla extract.
- Reduce the speed on the mixer to low and then slowly add in the eggs one at a time until they are all combined.ย Keep the mixer on low and then slowly add in the sugar and cornstarch.
- Increase the speed on the mixer and mix for 2-3 minutes until smooth.
- Pour the cheesecake batter into the springform pan.
- Bake at 325 degrees F for 40 minutes.ย Then turn the oven off, do not open the door and let the cheesecake sit in the oven for an additional 20 minutes.
- Allow the cheesecake to cool on a wire rack and then place the cheesecake in the freezer for 1 hour.
For the Frosting:
