Variations Ideas

  • Pumpkin Shape – Make these treats into pumpkin shapes. Simply shape each rice krispie treat into small balls for the pumpkin. Top it off with a tootsie roll stem and you have yourself a fun party treat or lunch snack.
  • Orange Food Coloring – Color your pumpkin rice krispie treats orange. After the marshmallows are melted, tint mixture with a couple drops of red and yellow food coloring. Mix until you reach desired orange color.
  • Pumpkin Pie Spice – You can use 1 teaspoon of pumpkin pie spice if you do not have the individual spices.

How to Make Pumpkin Rice Krispie Treats

  • Step 1 – Choose your desired size baking pan (I used a 9×9 pan, but for thinner treats use 11×7 or 13×9) and spray generously with nonstick cooking spray.

Step 2 – In a large saucepan, melt butter over medium heat. Stir in pumpkin puree (See how to make pumpkin puree) and cook until warmed through.

Step 5 – Pour mixture into the prepared baking pan, spread out evenly and gently press down with a rubber spatula.

  • Step 6 – Refrigerate to set for at least 1 hour. Cut into squares and drizzle with melted white chocolate, if desired.
  • Step 7 – Store in an airtight container for up to one week.

Recipe Tips

  • Baking Dish – To easily serve and clean your plan, make sure to spray the pan with cooking spray coating the bottom and both sides of the pan.
  • Pumpkin – Make sure to use pumpkin puree and not pumpkin pie filling. You will not get the same results if using the wrong pumpkin.
  • Marshmallow Mixture – Before mixing in the cereal, cool the marshmallow mixture for about 20 minutes.
  • Pressing Cereal Mixture – To easily press the cereal mixture into the pan we like to use wax paper that has been sprayed with cooking spray.
  • Melting Mixture – Make them in the microwave. Simply place the butter, pumpkin and marshmallows in a microwave safe bowl. Heat in the microwave for 2 minutes. Stir and cook for an additional minute. Stir until smooth. Allow mixture to cool and then add the cereal and mix until combined. Place in prepared pan or shape.
