My family loves biscuits! We seriously do, especially when we make our crock pot chicken pot pie recipe or our turkey chili.

Our kids love to have some biscuits. Biscuits are so easy to make so there really is so reason not to make them at home. They are even delicious topped with this Christmas Jam Recipe or Chocolate Gravy.

Plus they are frugal to make. You can make them at home for a fraction of the store bought cost. Have I mentioned that they taste better than store bought?

These are really just the best and oh so tasty!

Why This Recipe Works:

Once you try southern homemade biscuits, you won’t ever go back to store bought again. If you are short on time, try making homemade drop biscuits.

However you make these, they are going to make great. Just make sure to have cold butter and that also makes it easier to work the butter into the flour and work the dough. You can use a pastry cutter if you have one.

These homemade biscuits are delicious served many different ways.

Ingredients:

  • Whole Fat Greek Style Plain Yogurt
  • Heavy Whipping Cream
  • Whole Milk

Variations Ideas:

  • Melted Butter – Before baking the biscuits brush with melted butter for even more flavor.
  • Unsalted Butter – If you use unsalted butter, you may need to add in more salt.
  • Cheese – Mix in cheddar cheese for a delicious dinner biscuit.

Supplies Needed:

Step By Step Instructions:

Step 1 – In food processor, combine flour, baking powder corn starch, and salt.  Pulse to combine.

Step 2 – Next, add in the cold butter in  4 – 5 chunks.  Pulse a few seconds until the flour looks crumbly and the butter is evenly distributed in small lumps throughout the flour mixture.

Step 3 – Add yogurt, cream, milk, and egg to food processor.

Step 4 – Pulse until dough ball forms and gathers along the  side of the bowl.

Step 5 – Remove from bowl onto rolling surface that is lightly covered with corn starch.

Step 6 – Knead the dough a few times turning it over onto itself and turning about 6 – 10 times.

Step 7 – Use a rolling pin to roll out to 9 X 12 rectangle.  It will be about ¾ inch thick.

Step 8 – Cut the biscuit dough into 15 – 18 rectangles. You can also use a biscuit cutter.

Step 9 – Then place on parchment lined baking sheet (or use one of these awesome baking mats).

Step 10 – Bake on middle rack until biscuits are lightly browned.

How to Make Homemade Biscuits By Hand:

  • Step 1 – Preheat oven and line a baking sheet with parchment paper.
  • Step 2 – In a medium bowl, combine flour, corn starch, baking powder, and salt.  Stir to combine.
  • Step 3 – Add in the cold butter in  4 – 5 chunks.  Use a fork or a pastry blender to blend the butter into the dry ingredients. Mix until the mixture looks crumbly and the butter is evenly distributed in small lumps throughout the flour mixture.  This should take a few minutes to make sure there are no large clumps remaining.
  • Step 4 – In a separate small bowl, mix the yogurt, cream, milk, and egg.  Stir to combine.
  • Step 5 – Stir the wet mixture into the flour mixture until dough ball forms and gathers along the side of the bowl. 
  • Step 6 – Remove from large bowl onto rolling surface that is lightly floured surface covered with corn starch.  Knead the dough a few times turning it over onto itself and turning about 6 – 10 times.
  • Step 7 – Use rolling pin to roll out to 9 X 12 rectangle.  It will be about ¾ inch thick. Cut into 15 – 18 rectangles and place on parchment lined baking sheet.
  • Step 8 – Bake on middle rack at 450 degrees for 8 – 12 minutes until biscuits are lightly browned.

Recipe Tips:

  • Combining Ingredients – If the mixture is a little wet and doesn’t hold a ball shape you can add about a tablespoon of flour. Then stir to see if it holds together better.  If the mixture is too dry and doesn’t come together, you can add a teaspoon of milk and stir again.
  • Line Baking Sheet – Prepare the baking sheet by lining it with parchment paper. This helps with cleaning and serving these homemade buttermilk biscuits.
  • Cast Iron Skillet – We have even baked these biscuits in a cast iron skillet instead of a cookie sheet.

Why do my Biscuits Crumble?

Too much shortening will make your biscuits crumble.  You also want to make sure the butter is still cold in the mixture when they go into the oven.

We have even learned how to make biscuits without milk when we were out and I didn’t know. I do think that the milk makes the biscuits more flavorful though.

TIPS in the food processor: If the dough is too wet and doesn’t stay lumped together add 1 tablespoon of all-purpose flour and pulse. Repeat until dough is solid enough to handle. If dough is too dry, add 1 teaspoon of water and pulse. Repeat adding tiny amounts of water until all the dough sticks together in a ball.
