Once I find a meal everyone loves and it is frugal friendly, I keep it on the regular menu plan rotation. You can easily substitute stewing beef and use what you have in this slow cooker beef stew. Chuck roast is tasty variation.

  • Step 1 – Place all the ingredients in a crock pot. It is really that simple and easy!
  • Step 2 – Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  • Step 3 – Stir in the fresh parsley right before serving and enjoy!

Expert Tips

  • Thicker Consistency – If you prefer a thicker consistency you can mix in mashed sweet potatoes. We remove about ½ cup of cooked sweet potatoes and use a potato masher to mashed potatoes. Then stir the sweet potatoes back into the stew and let it simmer. This will thicken the stew broth.
  • Vegetables – Make sure to dice the veggies about the same size so that the vegetables cook evenly. We like using this vegetable chopper so they chop evenly.

    This was easy and delicious. I was snowed in and didn’t have a lot of ingredients. Recently moved so I literally had almost no spices.I used 1/2 tsp Mrs dash tomato basil garlic, salt and pepper. I used sweet potatoes, lentils, pinto beans, 1 flank steak cut into pieces, corn, canned whole tomatoes, canned beef broth. The lentils weren’t quite done but that was only issue. I still ate it.

    Linda – I have frozen this stew in the raw form (prior to cooking) but have not frozen it after it was cooked yet. You can freeze it after it is cooked but I’m would watch it closely when you are reheating it as the sweet potatoes might become too soft and fall apart. You can also cut them large to ensure that they won’t fall apart when reheating. Let us know how it works out!
