Ingredients

  • Unsweetened Cocoa Powder 
  • Baking Powder 
  • Salt 
  • Erythritol (granulated sugar consistency) 
  • Plain Greek Yogurt 
  • Egg 
  • Fat Free Milk 
  • Vanilla Extract 
  • Sugar-Free Chocolate Chips (divided)

Variations Ideas

  • Make Brownies with just Soda – These brownies are made from scratch. But you can also use a brownie mix with a can of soda for another low calorie options.
  • Sweetener of Choice – To add sweetness to these brownies, add the sweetener that you prefer. Other sugar substitute include monk fruit sweetener, coconut sugar, or a brown sugar substitute.
  • Chocolate Chips – Feel free to use dark chocolate chips or white chocolate chips that fit within your diet.
  • Whole Wheat Flour – You can also substitute the whole wheat flour with the all purpose flour for an easy swap.

Step by Step Instructions

Step 1 – Preheat the oven to 350 degrees Fahrenheit and line an 8X8 baking dish with parchment paper.  Spray the parchment paper with a non-stick cooking spray.

Step 2 – Place half of the chocolate chips in a large microwave safe bowl.  Microwave in 30 second intervals, stirring after each interval, until the chocolate chips are melted. Set aside and let it cool for a few minutes.

Step 3 – In a separate bowl, whisk together the flour, cocoa powder, erythritol, baking powder or baking soda and salt.

Step 4 – Then whisk the greek yogurt, egg, vanilla extract and milk into the bowl with the melted chocolate (that has cooled slightly).

Step 5 – Stir the dry ingredients into the wet ingredients and stir until just combined in a large mixing bowl.

Step 6 – Stir in the remaining chocolate chips.

Step 7 – Pour the batter into the prepared baking dish.

Step 8 – Bake for 20-23 minutes until a toothpick inserted into the center of the brownies comes out clean.  

  • Step 9 – Cool the brownies on a wire rack for 20-30 minutes and then they are ready to slice, serve and enjoy!

Recipe Tips

  • Prepare Baking Pan – For best results, prepare baking dish by spraying the pan with cooking spray and line with parchment paper.
  • Melting Chocolate Chips – Carefully melt the chocolate chips in the microwave in 30 second intervals. Stir the chocolate as you heat so that it does not burn.
  • Combining Ingredients – Combine the ingredients by hand until well blended but do not overmix.
