- Chicken Broth – Feel free to substitute the apple cider vinegar with chicken broth or white vinegar. You can also use a gluten free option with tamari.
- Spices – This slow cooker recipe is made with simple ingredients. Feel free to change or add what you prefer. Instead of minced garlic, you can use garlic cloves. Add in a ¼ teaspoon of ginger, black pepper and brown sugar for a hint of sweetness.
Step by Step Instructions
Step 1 – Heat the oil in a large skillet over medium high heat on the stove top. Add the bone-in chicken thighs and brown the chicken on both sides.
Step 2 – Then place the browned chicken thighs in a crock pot.
Step 3 – Place the garlic, onions, bay leaves, peppercorns and salt on top of the chicken in the slow cooker.
Step 4 – Combine the apple cider vinegar and soy sauce together in a small mixing bowl. Pour this sauce over the other ingredients in the crock pot.

- Cuts of Chicken Thighs – In this recipe we used skin on chicken thighs for the crispy texture when cooked in the pan. But if you prefer you can also use skinless chicken thighs. We recommend using chicken pieces that are about the same size so they cook evenly.
- Meat Thermometer – To make sure the chicken is cooked through, use a meat thermometer. The internal temperature should reach 165 degrees.
