Crock pot Irish beef stew

This is such a simple stew recipe but the flavor is just really something special. The broth is so rich and flavorful that you will want to get every last drop.

The roast in this recipe turns out even better because of one extra simple step. The roast gets tossed in a flour mixture before going into the crock pot.

Everything gets tossed into the crock pot for a delicious meal. This is one of our favorites to make once the weather turns cool.

Ingredients:

  • flour
  • salt and pepper
  • Chuck roast or pre-cut stew meat. Either of these would be delicious.
  • Yukon Gold potatoes. You can also use baby potatoes, red potatoes or russet potatoes.
  • baby carrots. These are easy because you do not have any prep work. However, you can use regular size carrots if you prefer and cut them up.
  • onion. Don’t skip the onion. It provides so much flavor.
  • minced garlic. Garlic powder or fresh garlic can be substituted.
  • beef broth. Vegetable broth is another delicious option.
  • tomato paste. We have used tomato sauce as well.
  • red wine vinegar
  • Worcestershire sauce
  • dried thyme
  • bay leaves
  • Fresh parsley for garnish

How to make Irish beef stew crock pot recipe:

  • First, place the roast, flour, salt and pepper in a large bag working in batches if needed, Give it a good shake so that all of the meat is coated in the flour mixture.

  • Next, place the meat in the bottom of the crock pot.
  • Then pour all of the other ingredients on top of the stew meat.

  • Finally, cover and cook on low until the beef is tender. Make sure to remove the bay leaves before serving. . I also like to top with fresh parsley.

What to serve with stew:

  • This stew is amazing with crusty bread so you can dip into that yummy broth. Pick up a loaf of French bread from the bakery or make these easy homemade dinner rolls. It is delicious.
  • I think a simple salad is also nice and a light option to serve with this stew. It is easy too.

Whatever you choose will be delicious. You definitely need some type of bread though to dip into the stew to get every last drop.

How to thicken Irish beef stew in slow cooker:

The flour that the meat was coated in will help thicken the stew. If you still want it thicker, just add one part cornstarch to two parts liquid.

I use the broth from the stew as the liquid. That way it keeps all of the flavor.

Add this to the slow cooker and turn the setting to high to allow this to thicken. Cover and simmer for 15 minutes. Then turn the slow cooker to warm and serve.

How to store leftovers:

Place leftover stew inside an airtight container in the fridge. It will last up to 4 to 5 days.

You can freeze the stew so it will last longer. However, the vegetables will become softer when thawed and reheated.

If you plan to freeze this, make sure to allow it to cool completely. Then place in freezer containers or bags. It will last up to 6 months in the freezer.

I prefer freezing in bags because they lay flat. It really saves a lot of space if you don’t have much room.

Tips and tricks:

  • This recipe calls for diced onion. One of my favorite time saving tip is to use a small food chopper or food processor to quickly and easily chop onions. I usually chop the entire vegetable and freeze what I don’t need.

    It’s so nice to be able to just take the diced onion out of the freezer for recipes. Learn and  how to freeze onions
  • Programmable crock pot  – I love using this type of slow cooker for when I am am not at home all day. It is nice to come home to a home cooked meal ready and waiting.
  • Crock pot liners Save time and use liners for the slow cooker. Clean up is a breeze.
  • Chop the vegetables into large chunks. If you cut the potatoes too small they will get very mushy when slow cooking.
  • Vegetables. More ideas to add include: green beans, green peas, corn or celery.
  • Low setting. While you can cook this recipe on high, I prefer it cooked on the low setting. The meat will have plenty of time to get really tender. The flavor is also just amazing.

Stovetop option:

You can fix this dish on the stove top if you prefer. Add the beef to bag and coat the meat as instructed. Brown the beef over medium high heat making sure to scrape any browned bits in a Dutch oven.

Remove the meat and add onion and add garlic. Sauté until transparent. Add the other ingredients and bring to a boil. Reduce heat and simmer for 2 hours.

    Tonie – I use a 6-8 quart crock pot when making this recipe. Yes, you can use pork instead of beef and chicken broth instead of beef broth. Also, I think a Guinness beer would be delicious in this recipe. Let us know how it turns out!
