A few weeks ago, I was craving a light chicken soup, but with a different flavor. So I came up with an Italian Chicken soup in the crockpot.

It is truly a one pot meal so that is a plus in my book! The slow cooker does all the work and there isn’t a ton of dishes and pans to clean up afterwards.

Let’s make Italian Chicken Noodle Soup!
This meal is so simple to make and perfect for busy weeknights. Even the kids will enjoy this meal.
The entire family will be excited for dinner time when they know this delicious soup is being served.
We used rotini pasta but any small noodles we do. Just use what you have or what is on sale.
Ingredients for Authentic Italian Chicken Soup:
- Boneless Chicken breasts (can be frozen) – You can also use boneless chicken thighs
- Onion
- Diced Tomatoes
- Red Bell Pepper
- Carrots
- Italian Seasoning
- Garlic Salt (The Best Garlic Salt Substitute)
- Bay Leaf
- Salt and Pepper
- Chicken Broth (see Chicken broth substitutes)
- Rotini Pasta
- Parmesan Cheese
How to make Slow Cooker Italian Chicken Soup:
- Dump everything (except for the pasta and parmesan cheese) into the crockpot.
- Cover and Cook on low for 8 to 10 hours. Shred the chicken into small pieces.
- Stir the uncooked pasta into the crock pot.
- Cover and cook on high for 20-30 minutes.
- Stir to combine. Then serve.
- We liked to serve it with Parmesan cheese and some garlic toast. YUM!
Salt and pepper to taste. It’s also really good with a little red pepper sprinkled in the soup for extra heat.
I always like to add extra black pepper to my bowl!

Crock Pot Italian Chicken Soup Recipe
Ingredients
- 2 boneless skinless chicken breasts
- 1 onion chopped
- 1 can diced tomatoes (15 oz)
- 1 red bell pepper chopped
- 4 carrots peeled and diced
- 2 tablespoons Italian seasoning
- 1 teaspoon garlic salt
- 1 bay leaf
- 1 tsp salt
- 1/2 tsp pepper
- 8 cups chicken broth
- 16 oz rotini pasta
- 1 cup parmesan cheese shredded for topping
Instructions
- Place all the ingredients except for the pasta and the parmesan cheese in a 6 quart crock pot.
- Cook on low for 8-10 hours or on high for 4-5 hours.
- Remove the chicken, shred and return it back to the crock pot.
- Stir in the uncooked pasta. Cover and cook on high for 20-30 minutes until the pasta is cooked through.
- Stir to combine. Serve topped with the shredded parmesan cheese and enjoy!

Being a widower I’m always on the lookout for easy, tasty recipes. This one is a winner. I froze individual servings without pasta. I unfreeze these packets, add a little broth, some egg noodles and have a tasty, filling meal when combined with a corn muffin!

Hi. I’m Sicilian and just saw this recipe. It is very similar to my Greatgrandmother who was born in 1880 in Palermo. I remember helping her make it when I was 10. Even at the age of 85 you would still find her cooking up a storm. Since there were no grocery stores when she,my Grandmother and my Mom had to use what was available on our Olive farm. Once a week we would meet up with the other farmers and each would share with the others. We’d give our Olive Oil and swap for Parmesano Reggiano Cheese or other things we needed. Reading about you and this recipe brought back so many incredible memories. We still own our farm. I’ve got 6 kids between 39 and 49 years old who also were born there. Before Covid 19, we’d make sure one of us was on the farm. Our kids who are all working for Doctors without Borders have been stranded in foreign countries all over the world. There’s plenty of work in each country due to Covid19. They used to always come home at Christmas, my husband and my birthdays and spend at least days with us. It’s hard on us not being able to see them in person and hug them. Since each of them loves to cook especially using a crock pot I’ll be sharing your awesome site. Easy is always for me ๐ In a couple months it will be fall again (my favorite time of year) and time for soups! Tho at least with the crockpot you won’t be heating up the house if you were to make it in the middle of summer.
