Homemade Egg Noodles tastes amazing and will be perfect in soup, casseroles and more. Once you get the hang of making them, it is fairly simple and a breeze to make.

Delicious homemade egg noodles are right at your fingertips. This egg noodle recipe is fairly simple to make and after your first few batches you will be a pro.
Homemade is a bit rustic and rarely uniform- the taste is what counts most of all.
The ingredients needed for this homemade egg noodle recipe is inexpensive so it makes for a thrifty way to practice a homemade basic recipe. You may already have all these things readily available in your pantry.
You can use these homemade noodles in a wide variety of dishes: Beef Stroganoff, Chicken Noodle Soup, Beef Tips and Noodles, Tuna Noodle Casserole, and Roast Beef – just to get you started.
This is also a great recipe to let the kids get in and get dirty with you. My kids love rolling out the dough. It is really fun to make these homemade noodles.
How are Egg Noodles made?
You truly only need a few inexpensive ingredients and in just a few steps you can make egg noodles. If you can roll out dough and cut it, you can seriously make these.
There is no need for a pasta machine.
Ingredients for Homemade Egg Noodles Recipe:
- All-Purpose Flour
- Milk
- Eggs
- Canola or Olive Oil
- Salt
How to Make Homemade Egg Noodles:
There are a few steps to this but they are all very simple. You will be making these like a pro in no time at all.
- Step 1 – First, stir together flour and salt in a medium bowl.
- Step 2 – Make a โwellโ or depression in the center of your flour mixture.
- Step 3 – Next, pour eggs, milk and oil into the center. Mix well.
- Step 4 – Dough will be sticky, and it will smooth out while you knead.
- Step 5 Lightly sprinkle flour surface onto a clean counter or tabletop surface.
- Step 6 – Knead dough for 5 minutes.
- Step 7 – Roll dough out into a large rectangle, making it as thin as you can-almost translucent is ideal if you have the arm muscles for it.
- Step 8 – Let noodles rest for 30 minutes, covered, to allow gluten to relax.
How to Knead the Dough:
Kneading the dough is a workout but it is a must when making these Homemade Egg Noodles. Kneading the dough takes about 10 to 15 minutes.
- Place the dough ball on a flour work surface.
- Begin by placing the heel of your hand on the dough and press forward.
- Continue rotating and repeating this process until the dough is no longer sticky.
- If the dough still is sticky, wet then you will need to add more flour and continue kneading.
How to Roll the Dough:
Once you have finished kneading the dough, then you are ready to roll the dough.
You will roll the dough to your desired thickness and width with a rolling pin. We like to make the dough thin so our pasta will be thin.
If you have an scraps leftover, combine them and roll to cut into more noodles. We like to use every piece of scrapes. They will still be delicious even if they are not the same size.
How do you Cut Homemade Egg Noodles?
Cut noodles using a sharp knife, or my favorite pizza cutter. Make them any size you like, for general purpose I make mine about ยฝโ wide by 3โ long.
How to Cook Egg Noodles:
Drop noodles into boiling water and cook for 12-14 minutes. The noodles will start to sink to the bottom and will be fork tender when they are ready.
Scoop the noodles out with a slotted spoon to drain.
You can also mix these in with your favorite recipe such as chicken noodle soup or casseroles. We love the noodles in Crockpot Chicken Noodle Soup when cooking in large pot.
How to Freeze your Homemade Egg Noodles:
Noodles can be prepared ahead of time and you can actually freeze them.
- Allow them to dry on counter for 2 hours, flip, and dry another hour.
- Then place them in a freezer safe zippered bag. Label the bag with the date using a Sharpie.
- You can store them up to 2 – 3 months in the freezer.
- You will cook them just like you would when they are fresh – place in boiling water for 15 minutes.
Tips for Making Egg Noodles:
- Fresh Ingredients – Make sure you ingredients are not expired.
- Just Make it – Making egg noodles are very forgiving. They will still be delicious even if they are not the same size.
- Dough – If your dough is to sticky, add more flour or if it is to dry add a sprinkle of water.
Do you Have to Let Homemade Egg Noodles dry before Cooking?
It is not necessary to let the dough dry first before cooking. We have done it both ways and they turned out amazing.
For them to taste like the packaged noodles, then let them dry. But if you want a more traditional noodle, cook immediately.
Why are my Homemade Egg Noodles tough?
When kneading the dough make sure to not to over knead it. We like to knead the dough until all the ingredients are combined and it is not sticky.
How Long Can you Leave Homemade Egg Noodles out to Dry?
We recommend to only allow the noodles to dry up to 2 hours on drying racks.
