- Chocolate – We like adding in chops of Hershey’s Bar or any Milk Chocolate Bar after the cookies have baked. For a delicious variation, chop up Peanut Butter Cups to top the cookies with.
- Chocolate Chips – We love the flavor that the semi-sweet chocolate gives the cookies, but you can also use dark chocolate chips or milk chocolate.
How to Make S’mores Cookies
- Step 1 – In a medium bowl, whisk together the all purpose flour, crushed graham crackers, baking powder or baking soda, and ¼ teaspoon salt or flaky sea salt. Set aside.
- Step 2 – In a large bowl, beat the softened butter, brown sugar, and granulated sugar until the mixture is smooth and well combined.
- Step 3 – Mix in the large eggs one at a time, then add the 1 teaspoon vanilla extract and continue beating until fully incorporated.
- Step 4 – Gradually add the flour mixture to the wet ingredients, stirring until just combined. You can also combine with a stand mixer with paddle attachment or hand mixer.
- Step 5 – Gently fold in the chocolate chips.
- Step 6 – Drop 2-ounce (about 2 tablespoons) portions of dough balls onto an ungreased baking sheet, spacing them apart. Bake at 350°F for 8 minutes.
- Step 7 – Remove the cookies from the oven and quickly press 4 mini marshmallows and 2-3 pieces of chopped chocolate onto each one.
- Step 8 – Return the cookies to the oven and bake for an additional 2 minutes, or until the marshmallows are golden brown.
