This Lasagna Soup is loaded with flavor and made with simple ingredients. You can easily customize the ingredients to what you prefer. We have changed the meat, noodles and added in fresh herbs for a delicious variation.

Ingredients
- Ground Beef – We used Lean Ground Beef
- Onion – Dice onion with a vegetable chopper so they are about the same size. You can easily prepare these early and learn How to Freeze Onions?

- Beef Broth – Feel free to substitute with low sodium chicken broth or use water

Variation Ideas
- Change Pasta – Feel free to use other type of pasta such as bow-tie pasta or penne pasta.
- Meat Variation – You can make this lasagna soup with ground turkey instead of ground beef. We have even made it with half Italian Sausage and half Ground Beef.
- Heavy Cream – If you prefer a creamy texture, add in heavy cream. This also helps to thicken the consistency as well.
- Tomatoes – If you are do not have crushed tomatoes, add in diced tomatoes, marinara sauce and tomato paste.
- Seasoning – Substitute the dried seasoning with Italian Seasoning for an easy substitute. We have even added in ½ tsp of fresh parsley, fresh basil, and red pepper flakes for a spicy flavor.
- Veggies – This is a great soup to sneak in vegetables. We like to add in a cup of chopped bell peppers and fresh spinach towards the end of cooking time for amazing taste.
How to Make Lasagna Soup
Step 1 – In a large Dutch oven, brown the ground beef over medium heat. Drain any excess fat.
Step 2 – Add the diced onion and minced garlic to the pot. Cook for about 5 minutes until the onion is softened.
Step 3 – Stir in the crushed tomatoes, beef broth, dried oregano, dried rosemary, salt, and pepper. Bring the mixture to a boil.
Step 4 – Add the broken bite-sized pieces lasagna noodles and reduce the heat to a simmer. Cook for 8-10 minutes, or until the noodles are tender.
Step 5 – In a small bowl, mix the ricotta cheese, egg, ¼ cup of Parmesan cheese, and ½ cup of the shredded mozzarella cheese. Set aside.
Step 6 – Once the noodles are cooked, stir the cheese mixture into the soup. Cook for an additional 2-3 minutes, until the mixture is heated through and fully incorporated. Ladle the soup into bowls and top each serving with the remaining shredded mozzarella, Parmesan cheese and a dollop of ricotta cheese.. Enjoy!
Expert Tips
- Cooking Noodles in Soup – Be careful not to overcook the noodles in the soup, as they can get too soft. Check for tenderness around 8 minutes.
- Large Pot Recommendation – We recommend cooking Lasagna soup in a Dutch Oven or a large pot to hold the large serving of soup. Continue stirring the soup as it cooks to make sure the soup is mixed together.
- Noodles – You can easily break the noodles up by hand. They noodles do not have to be the perfect size.

Frequently Asked Questions
This soup is perfect to make ahead of time. We do recommend not adding the noodles until ready to serve. Prepare the soup and then store in the fridge in a airtight container. When ready to serve, pour the soup back in a large pot to heat and add the noodles to cook.
After bringing the broth mixture to a boil, you will add the broken noodles to the soup and cook. The noodles will cook in about 10 minutes. If you prefer, you can cook the noodles separately in another large pot with a tablespoon of olive oil.
Store leftover Lasagna Soup in an airtight container in the refrigerator for up to 5-6 days.
If you plan on freezing Lasagna Soup, we recommend keep the cheese and noodles separate. Freeze the soup in a freezer safe container for up to 2 months. Thaw soup in the fridge overnight then add in the cooked noodles and cheese before serving.
