My entire family loves this Squash Casserole. I have even made it during the summertime with our Grilled Teriyaki Steak for an easy weeknight meal.
This squash casserole can be made in a variety of ways with delicious spices, added vegetables and a crunchy topping.
Ingredients
- Yellow Squash – Sliced Squash ½ inch thick. You can even add in slice zucchini or other vegetables

- Shredded Cheddar Cheese – You can also use sharp cheddar cheese or swiss cheeses
- Cream of Chicken Soup – Make Homemade Cream of Chicken Soup
- Butter – We used unsalted butter
- Garlic Powder – See The Best Garlic Powder Substitute if you are out
- Crushed Butter Crackers – We used Ritz Crackers but you can also use bread crumbs

How to Make Squash Casserole
- Step 1 – Preheat oven to 350°F. Grease a 9×13 inch baking dish.
Step 2 – In a large pot, boil sliced squash and diced onion for 5 minutes over medium heat.
Step 2 – Drain the liquid well with colander and pat dry with paper towels.
Step 3 – In a large bowl, mix together cooked squash, onion, cheddar cheese, sour cream, cream of chicken soup, beaten eggs, 2 tablespoons melted butter, garlic powder, salt, pepper, and parsley.
Step 4 – Pour the mixture into the prepared baking dish.
Step 5 – In a separate bowl, mix crushed crackers with ¼ cup melted butter and Parmesan cheese.
Step 6 – Sprinkle the cracker mixture evenly over the squash mixture.
- Step 7 – Bake for 30-35 minutes, until the top is golden brown and the casserole is bubbly.
- Step 8 – Let stand for 5 minutes before serving.

- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 can 10.5 ounce cream of chicken soup
- 2 large eggs beaten
- 2 tablespoons butter melted
- 1 teaspoon garlic powder

- 1 1/2 cups crushed butter crackers
- 1/4 cup butter melted
- 1/4 cup grated Parmesan cheese
