Ingredients - Ground Venison, onion, garlic, red bell pepper, green bell pepper, diced tomatoes, kidney beans, black beans, beef broth, tomato paste, chili powder, cumin, paprika, oregano, cocoa powder, ground coriander, salt, pepper
  • Ground Venison – You can use any type of meat. Stew meat is also a delicious variations.

  • Bell Peppers – Diced into small pieces
  • Diced Tomatoes – You can also use a can of Rotel
  • Kidney Beans and Black Beans – We recommend to drained and rinsed beans before adding to chili mixture

  • Cocoa Powder – The cocoa powder in the seasoning mix adds depth to the flavor without making it taste like chocolate. Don’t skip this ingredient!

How to Make Venison Chili in the Slow Cooker

Step 1 – In a large skillet over medium-high heat, brown the ground venison. Drain any excess fat.

Step 2 – Transfer the browned venison to the slow cooker.

Step 3 – In the same skillet, sauté the onions, garlic, and bell peppers for 3-4 minutes until slightly softened. Add to the slow cooker.

Step 4 – In a small bowl, mix all the homemade chili seasoning ingredients.

Step 5 – Add the seasoning mixture to the slow cooker and stir to combine with the meat and vegetables.

Step 6 – Add diced tomatoes, kidney beans, black beans, beef broth, and tomato paste to the slow cooker. Stir well to combine all ingredients.

  • Step 7 – Cover and cook on low for 6-8 hours until meat is tender.

  • Cooking – We usually cook chili on low, but you can cook on HIGH 3-4 hours instead.
  • Thicker Consistency – For a thicker chili, you can add a cornmeal slurry (2 tablespoons cornmeal mixed with ¼ cup water) in the last hour of cooking.
  • Ground Venison – Cook ground deer meat in the skillet and make sure to drain excess grease.
