How to Make Chicken and Rice
Step 1 – Season the chicken breasts with salt and pepper on both sides.
Step 2 – In a large, deep pan or Dutch oven, heat the olive oil and butter over medium heat. Add the chicken breasts and cook until golden brown on both sides, about 6-8 minutes per side. Remove the chicken from the skillet and set aside.
Step 3 – In the same skillet, add the diced onion and minced garlic. Cook, stirring occasionally, until the onion is softened and translucent, about 3-4 minutes.
Step 4 – Add the uncooked rice, chicken broth, oregano, basil, salt, and pepper to the skillet. Stir to combine and bring the mixture to a boil.
Step 5 – Reduce the heat to low, place the browned chicken breasts on top of the rice mixture, and cover the skillet with a tight-fitting lid. Simmer for 20-25 minutes, or until the rice is tender and the chicken is cooked through.
Step 6 – Remove the skillet from the heat and transfer the chicken breasts to a plate. Stir the grated Parmesan cheese into the rice until well combined. Garnish with chopped fresh parsley, if desired.
