Why We Love This Recipe
Coffee Cake Cookies taste amazing and are made with simple ingredients. If you love to bake, then you probably already have all the ingredients. These cookies are perfect for the holidays or with your morning coffee.
Adding the homemade glaze to the top makes this cookie taste even better.
Ingredients
- All Purpose Flour – You can substitute with Gluten Free Flour
- Butter – Use softened unsalted butter

How to Make Coffee Cake Cookies
- Step 1- Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper. Set aside.
Step 2 – Mix together all the streusel topping ingredients in a medium size mixing bowl with a pastry cutter or a fork until combined.
Step 3 – Mix together the butter with the brown sugar and sugar with a hand held mixer or stand up mixer until combined and smooth. Add in the cinnamon, egg and vanilla extract until combined. Then add in dry ingredients.
Step 4 – Use a large cookie scoop (approximately 3 tablespoons) to scoop the dough mixture into 12 even rounded balls and place them on the baking sheet at least 2 inches apart.
Step 5 – Make an indention into the center of each cookie dough ball with your thumb or a small spoon.
Step 6 – Place approximately 1 tablespoon of the crumb topping into each of the cookie dough indentions.
Step 7 – Bake for 10-12 minutes until the edges are set and start to brown slightly.
- Step 8 – Allow the cookies to set for 10 minutes on the baking sheet and then move them to a wire rack to cool completely. Sprinkle any remaining streusel on top of the cookies before topping with the glaze.
- Step 9 – Whisk all the vanilla glaze ingredients together in a small bowl. Check the consistency of the glaze. Add more milk if the glaze does not drizzle easily.
- Step 10 – Drizzle the glaze over each of the cookies and then the cookies are ready to serve and enjoy!
Recipe Tips
- Room Temperature Ingredients – Make sure that all the ingredients are at room temperature before making the cookies to ensure that the ingredients combine together smoothly.
- Streusel – Make sure to refrigerate the streusel while making the cookies. This keeps it at crumbly consistency and you can also make it ahead of baking the cookies.
- Baking Cookies – Bake cookies until they are slightly browned. You want to make sure to not overbake as these cookies are to be served soft.
- Combining Ingredients – Combine ingredients with a stand mixer with paddle attachment or with a hand mixer.
Frequently Asked Questions

Coffee Cake Cookies
Ingredients
For the Streusel:
- 1/2 cup All Purpose Flour
- 1/2 cup butter softened
- 1/4 cup brown sugar
- 1 tsp cinnamon
- pinch of salt
For the Cookies:
- 1/2 cup Butter softened
- 1/2 cup Light Brown Sugar
- 1/4 cup Granulated Sugar
- 1 Large Egg
- 2 teaspoons Ground Cinnamon
- 1/4 teaspoon Vanilla Extract
- 2 cups All Purpose Flour
- 1 Tablespoon Cornstarch
- 1/2 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Salt
For the Glaze:
- 1/2 cup Powdered Sugar
- 1 Tablespoon Milk
- 1/4 teaspoon Vanilla Extract
Instructions

For the Cookies:

- Then turn the mixer down to low and add in the flour, cornstarch, baking powder, baking soda and salt until just combined. Be careful not to over mix the dough.
- Use a large cookie scoop (approximately 3 tablespoons) to scoop the dough into 12 even rounded balls and place them on the baking sheet at least 2 inches apart.
- Make an indention into the center of each cookie ball with your thumb or a small spoon.
