The great thing about this keto casserole is it can be made in a variety of ways.

  • Add Bacon – Make Keto Bacon Cheeseburger Casserole by simply adding in ½ pound fried bacon to the hamburger.  Bacon makes everything better and takes this recipe to a new level.
  • Add Veggies – You can easily sneak in vegetables to this casserole. Try these additions, chopped pickles, broccoli, cauliflower rice or jalapeno peppers.
  • Change Meat – Feel free to change the meat to ground pork, ground turkey or shredded cooked chicken.
  • Cheese – In this casserole, you can easily change the cheese that you prefer. A great addition is mozzarella cheese or pepper jack cheese.

How to Make Low Carb Cheeseburger Casserole

  • Step 1 – Preheat the oven to 400 degrees Fahrenheit.

Step 2 – Brown ground beef with the garlic and diced onions and the beef is no longer pink in a large skillet.  Break up the beef as it cooks. Drain off any excess grease.

Step 3 – Stir in the cream cheese and drained can of diced tomatoes.  Heat for a few minutes to melt the cream cheese and stir to thoroughly combine all the ingredients.

Step 4 – Remove the pan from the heat, stir in the ketchup, mayonnaise, yellow mustard, Worcestershire sauce, diced pickles, salt and pepper.

Step 5 – Stir in 1 cup of the shredded cheddar cheese.

  • Step 6 – Pour the ground beef mixture into a casserole dish.  Bake for 15 minutes.  
  • Step 7 – Top with remaining cheese and bake for 5-7 more minutes until the cheese is melted. 
  • Step 8 – Remove the dish from the oven and let it rest for 10 minutes to set. Serve warm and enjoy!

  • Baking Dish – This recipe is perfect in a 9×13 casserole dish. The ones with the lid are really handy if you are taking this dish somewhere. I use the disposable pans for weeks I need to save time on clean up.
  • Make Ahead – This Keto Hamburger Casserole is the perfect meal to meal prep with for the week. I like to prepare the casserole and then bake for a quick and easy weeknight meal.
  • Shredded Cheese – We recommend shredding the cheese yourself as the cheese will melt perfectly and it just taste better. Pre-Shredded cheese is added ingredients that are not necessary.

Serving Suggestions

This cheeseburger casserole can be served as a complete meal but I always serve with a side salad for a light side dish. You can also serve with Air Fryer Broccoli, Oven Roasted Asparagus or Easy Oven Roasted Brussel Sprouts.

We also love to serve this casserole with toppings which include slice pickles, shredded lettuce and a drizzle of sour cream.

We recommend using lean ground beef to make this recipe. But you can use what you prefer. I always make sure to drain excess grease from the beef before mixing with the other ingredients.

Store leftover cheeseburger casserole in an airtight container in the refrigerator. The leftovers will last about 3-4 days.

Can I Freeze Cheeseburger Casserole?

Yes, this cheeseburger casserole freezes great. Make sure to store in a freezer safe container or wrap the disposable pan in plastic wrap and then in aluminum foil. This will keep the casserole fresh and without freezer burn. Thaw in the fridge overnight when ready to reheat.

Recipe Notes

Refrigerate the leftovers in an airtight container for up to 4-5 days.  Reheat the leftovers in the microwave. 
You can make this recipe with ground chicken or ground turkey if you prefer but it does change the flavor slightly.

    I love this recipe! I didn’t have tomato paste so I used a can of the el pato hot tomato sauce and it was delicious!! I’m on keto and try to find easy recipes that the whole house will eat and this was perfect. I’m not a good cook, but your recipe was well written and easy to follow.

    One question…. how can I freeze this to heat and eat later? Meal prep is a must do for me on keto and freezing casseroles seems to be the best bet.
