  • Large Eggs – Use room temperature eggs for best results
  • All Purpose Flour – Use gluten-free flour or whole wheat flour for a delicious variation

How to Make Oatmeal Banana Bread

  • Step 1 – Preheat the oven to 350 degrees F. Prepare a 9×5-inch loaf pan by lining it with a parchment paper with two sides overhanging as a handle. Then, lightly grease with nonstick spray.

Step 2 – In a large mixing bowl, whisk together the brown sugar, milk, butter and eggs. 

Mix in mashed bananas and vanilla to the milk mixture

Step 3 – Then stir in the mashed bananas and vanilla extract. 

Combine the oats, flour, baking powder, baking soda, cinnamon, nutmeg, and salt together in a bowl with a whisk

Step 4 – In a separate bowl, whisk together the flour, 1 ½ cups oats, baking powder, baking soda, cinnamon, nutmeg and salt.

Step 5 – Add the dry ingredients into the wet ingredients and mix until combined.

Step 6 – Pour the batter into the prepared loaf pan and top with 1 tablespoon of oats. Bake for 30 minutes.

Step 7 – Loosely cover the pan with foil to keep the bread from overly browning and bake for 15-25 more minutes until a toothpick inserted into the center of the bread comes out clean. 

  • Step 8 – Let the bread rest in the pan for 10-15 minutes and then use the parchment paper to carefully remove the bread from the pan.  Place the bread on a wire rack to cool completely. 
  • Step 9 – Then the bread is ready to slice, serve and enjoy!  

Recipe Tips

  • Prepare Baking Loaf – To easily remove the bread from the pan, line with parchment paper and spray with cooking spray. It makes it easier to slice with the bread is out of the loaf pan.
  • Baking Bread – Cooking time will vary when baking this bread. After about 30 minutes we recommend covering with foil so the center of the bread can finish cooking. Inserting a toothpick in the center of the bread is the best to make sure the bread is fully cooked.
  • Rest Bread – For best results, we recommend resting bread in the pan for about 15 minutes.

How to Reheat Bread

When you are ready to serve again, allow bread to thaw in the refrigerator overnight. Then reheat in the microwave in 30 second intervals until ready to eat.
