These fun and festive pancakes are a fun twist on your classic pancake recipe. The bright fun colors make all my kids smile and so I make them for all the special occasions for an easy breakfast recipe.

Being a mom of 8, I like to find fun way to celebrate the holidays or birthdays that are budget friendly. Making holiday pancakes is an easy way to start the holiday and it gives my kids something to look forward to.

These pancakes are made from scratch and the colors can easily be changed to what you prefer.

Ingredients

Step by Step Instructions

Step 1 – In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.

Step 2 – In a separate bowl, beat the eggs and then stir in the milk, melted butter, and vanilla extract until well combined.

Step 3 – Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

Step 4 – Divide the pancake batter evenly into six different bowls.

Step 5 – Add a few drops of food coloring to each bowl to create the colors of the rainbow: red, orange, yellow, green, blue, and purple. Stir each bowl until the color is evenly distributed.

Step 6 – Heat a non-stick griddle or skillet over medium heat and lightly grease it with butter or cooking spray.

Step 7 – Pour ¼ cup of the red pancake batter onto the griddle and cook until bubbles form on the surface. Flip and cook until the other side is golden brown, about 1-2 minutes per side. Repeat with the remaining colors of the rainbow batter, cooking one color at a time.

Step 8 – Stack the cooked pancakes in rainbow order (purple, blue, green, yellow, orange, red) on a serving plate. Top the stack of pancakes with whipped cream before serving.

Recipe Tips

  • Batter Consistency – The batter should be slightly thick but pourable. If it’s too thick, add a little more milk; if too thin, add a bit more flour. Make sure to not overmix the batter.
  • Food Coloring – Use gel food coloring for more vibrant colors without thinning the batter. Start with a few drops and add more as needed to reach your desired shade. Liquid food coloring can also be used, but you might need more to achieve the same intensity.
