As a mom of 8 kids, making themed breakfast has become a tradition in my home. My kids look forward to it for every holiday. With these St Patrick’s Day Pancakes it is a great way to start a fun holiday.

These green pancakes are perfect to celebrate the St Patrick’s holiday with. They are made with simple ingredients and you can add your favorite toppings.

Ingredients

St Patrick's Day Pancakes ingredients - flour, sugar, baking powder, baking soda, salt, buttermilk, egg, butter, food coloring, maple syrup, lucky charms marshmallows, whipped cream
  • All Purpose Flour
  • Granulated Sugar
  • Baking Powder 
  • Baking Soda
  • Salt 
  • Buttermilk 
  • Large Egg beaten
  • Butter (melted and cooled)
  • Green Gel Food Coloring bright green
  • Maple Syrup (optional for serving) 
  • Lucky Charms Marshmallows (optional for serving) 
  • Whipped Cream (optional for serving)

Variation Ideas

  • Flour – For a healthier version, you can substitute with a gluten-free flour or add in oats. If you are using oats, place in a blender to make into a flour texture.
  • Additions – You can easily add in a tsp of vanilla extract and cinnamon for added flavor.

Step by Step Instructions

Combining the dry ingredients in a bowl

Step 1 – In a medium size bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Set aside.

Step 2 – Then in a separate large bowl whisk together the buttermilk, egg, melted butter and green food coloring.

Step 3 – Add the dry ingredients into the wet ingredients. Mix for approximately 30 seconds until the ingredients are combined. The batter will be lumpy.

Step 4 – Preheat a griddle, cast iron skillet or non stick skillet or frying pan over medium high heat.  Grease with a non-stick cooking spray or a small amount of butter.

Step 5 – Pour the batter to the pan in approximately ¼ cup scoops. Cook for 2-3 minutes until small bubbles start to appear at the top of the pancake.

Step 6 – Flip the pancake and finish cooking for 2-3 more minutes until golden brown.

  • Step 7 – Transfer the pancake to a plate and continue this process until all the batter is used.
  • Step 8 – Served topped with syrup, Lucky Charm marshmallows and whipped cream.  Enjoy!

  • Food Coloring – Make sure to use a green gel food coloring to get a vibrant green coloring for the pancakes. 
  • Cooking Pancakes – You don’t want them to get too browned or you won’t see the green color so watch them closely while they are cooking.

Serving Suggestions

These green pancakes are delicious served with bacon In the oven and a side of fruit. We like to serve with green grapes, banana, blueberries and strawberries.
