Why This Recipe Works
Grilled pizza has now become our preferred way of making pizza at home. This recipe starts with a store-bought pizza crust and topped with leftover shredded chicken, cheese and onions.
Making pizza at home saves me time and money. It also allows my family to add their favorite toppings. Add a side salad or roasted vegetables and it becomes a complete meal.
Ingredients
- Premade (pre-cooked) Pizza Crust
- Shredded Cooked Chicken
- BBQ Sauce (divided)
- Mozzarella Cheese
- Cheddar Cheese
- Red Onion, diced
- Fresh parsley to garnish, chopped

Variations Ideas
- Chicken – We used cooked boneless chicken breast for this recipe but you can also use rotisserie chicken or grilled chicken. This Grilled Hawaiian BBQ Chicken would be delicious topped on this pizza.
- Toppings – You can easily add your favorite toppings. When serving top with fresh cilantro, tomatoes, corn or bell peppers.
- Cheese – Feel free to change the cheese to what you prefer. We have use gouda cheese, fresh mozzarella and Colby Monterrey Jack.
- Homemade Pizza Dough – You can easily make this recipe with homemade pizza dough. But you will need to grill it before placing the toppings.
- Pizza Sauce – Feel free to substitute the barbecue sauce for pizza sauce.
Step by Step Instructions
Step 1 – Preheat the grill. In a small bowl, toss the chicken with the ¼ cup BBQ sauce.
Step 2 – Spread the rest of the BBQ sauce on the premade pizza crust.
Step 3 – Top with the chicken.
Step 4 – Top with shredded mozzarella cheese. Sprinkle with red onions.
- Step 5 – Top with shredded cheddar cheese
- Step 6 – Place on a grill and cover.
- Step 7 – Cook over medium-high heat for 8-12 minutes or until cheese is melted and the crust is brown.
- Step 8 – Serve hot with fresh parsley on top.

- Grilling Pizza – We grilled the pizza directly on the grill grates but you can also place it on a pizza stone.
- Cooking Methods – We love the flavor that the grill gives the pizza but you can also bake this pizza in the oven. Place on a pizza stone, baking sheet or pizza pan to bake. Bake in the oven at 350 degrees until cheese is melted and heated through.
- Shredding Chicken – If your chicken is not already shredded before preparing this pizza, then you can shred it with forks or learn how to shred with a Stand Mixer.
