Easy Zuppa Toscana Soup Recipe:
We can’t get enough of this Zuppa Toscana Soup. We have made it in the pressure cooker, crock pot and now we make it in our Dutch Oven. It taste amazing and it is easy to make.
It is one of our favorite soups to get at Olive Garden and now I can easily make it at home. The ingredients are easy and everything gets cooked right in the Dutch Oven.
This soup is perfect for a cold day as it just warms your soul. It is satisfying and the perfect soup to serve with some warm bread. Whether you make instant pot zuppa Toscana soup or make it on the stove, it is always a crowd favorite.
What is Zuppa Toscana?
If you have ever gone to Olive Garden chances are you have had this soup. Zuppa means soup and Toscana means Tuscan. The Zuppa Toscana recipe is creamy, delicious and loaded with flavor.
This classic soup is made with kale, Italian Sausage, potatoes and more. We love copycat recipes and this is one of my family’s favorites. The ingredients can easily be changed to simplify it or to use what you have.
Ingredients:

- Ground Italian Sausage
- Minced Garlic
- Onion, chopped
- Russet Potatoes peeled and diced
- Salt
- Pepper
- Chicken Broth
- Bunch Kale stems (removed and cut into bite size pieces)
- Heavy Whipping Cream
- Shredded Parmesan Cheese (for topping)
How to Make Zuppa Toscana on the Stovetop:
- Step 1 – Brown Sausage – Brown the sausage in the pot and crumble the sausage as it is cooked. Add in the diced onions and garlic sautรฉ it as the sausage browns.
- Step 2 – Drain Grease – Drain off any excess grease from the pan and cooked sausage.
- Step 3 – Add in Garlic – Then add in the minced garlic and cook for 1 minute until the garlic is fragrant.
- Step 4 – Stir in Potatoes – Then add in the potatoes, salt, pepper and chicken broth.
- Step 5 – Combine Ingredients – Stir to combine all the ingredients.
- Step 6 – Bring to Boil – Bring the mixture to a boil and then gently boil over medium high heat. Boil for 10-15 minutes until the potatoes are fork tender.
- Step 7 – Stir in Heavy Cream – Then stir in the heavy whipping cream and kale. Cook for approximately 5-6 minutes until the kale is slightly wilted.
- Step 8 – Serve and Enjoy – Serve warm and enjoy.
Can you Freeze Zuppa Toscana Soup?
Yes, you can freeze this cream soup. Since this soup is cream base, it may not thaw as well. The texture may separate as it thaw. You may need to add more heavy cream to thicken it.
If you plan on making this ahead of time. You can make the soup but donโt add the kale and cream. Just add the kale and cream once you have thawed the soup and it will turn out perfectly.

What to Serve with Zuppa Toscana:
This soup is delicious served with many different sides. This soup is rich and hearty so a simple side is what I usually serve with it. These are some of our favorites.

Variation Ideas:

- Vegetables – If you prefer, you can easily sneak in vegetables in this recipes. Chop cauliflower florets to add to the soup and heat over medium-high heat.
- Sausage – We use Italian Sausage in this recipe, but you can easily use turkey sausage or ground beef. Make sure to cook it before mixing with the other ingredients.
- Bacon – Add some chopped bacon in the mixture or sprinkle onto before serving the soup.
- Seasoning – If you prefer the soup to be have a kick, add a teaspoon of crushed red pepper flakes. This is the perfect addition. You can also add it as it is being served.
Do you Have to Use Kale?
Kale is a classic ingredient in this soup, but you do not have to use it. When you using it this recipe you really can not taste it as it cooks down. But if you prefer you can also use baby spinach.
It is a great substitute and it still taste amazing.
Recipe Tips:
- Kale – Prepare the kale by remove any damaged leaves and removing the stems.
- Prepare the Sausage – Before mixing in the other ingredients, make sure to cook the sausage. That is why we cooking the ingredients on a stovetop as everything can cook in one pot.
- Cutting the Potatoes – We preparing the potatoes, make sure to cut them in about the same size. This ensure that they cook evenly.
- Adding in Kale – Add in the kale and heavy cream towards the end of cooking time.
How to Store Leftovers:
We love leftover soup. In my opinion it is even better the next day. If you store the soup in a sealed container, it can typically last 3-4 days in the refrigerator.
To reheat, place soup on the stove top over medium heat until heat thoroughly. I will to put the leftovers in individual containers. This makes it an easy lunch for my husband to grab as he walks out the door.
