Easter Bunny Cake
Every year we make these Easter Basket Cupcakes and the kids love them! I thought this year I would try something different and make this Easy Bunny Cake! Don’t let this cake scare you because it is actually very simple. It looks really fancy but it’s not difficult to make.
We break it into step by step instructions so it’s really very easy to do! You might also like to make ย Bunny Cupcakes. Sometimes I like to make both and put the cupcakes around the cake. So cute!

We love Easy Easter Cakes!
Once you get organized you will just how simple this cake is. Trust me! I only do simple around here. ๐ The kids are going to think you are the best and it will be a hit with everyone.
I like to put this gorgeous cake on a cake stand and sprinkle a little extra coconut and jelly beans around. It’s so pretty! The white coconut on the bunny with the green coconut “grass” contrast so nicely and provide an instant burst of color.
The recipe calls for 2 tubs of white frosting. If you have a few extra minutes, this Vanilla Buttercream Frosting is amazing. It’s very simple to make and you just can’t beat the taste! So good!
You could also use this Vanilla Cake from scratch for the bunny cake. Delicious! I use Wilton cake pans but any will do. Just make sure you have a good set!
Make sure your cake is really cool before cutting and icing. I use a set of these baking racks and they are great!
The Coconut fixes any imperfections
Now don’t worry if your bunny doesn’t look quite the way you are hoping when you are icing it. The coconut truly smooths everything and makes it all come together. It hides any imperfections and gives it that cute fluffy bunny look!
Ingredients:
- 2 cake rounds (8″ or 9″), baked and cooled completely (Try Vanilla Cake from scratch )
- 1 package, 14 oz, coconut flakes
- 2 tubs white frosting (or make this Vanilla Buttercream Frosting)
- jelly beans
- green food coloring
- black color gels
- paper and scissors
How to make Easy Bunny Cake:
1. Place about 1 cup of coconut into a resealable bag.
2. Add 1 teaspoon of water to a small bowl and add 5 drops of green food coloring to the bowl. Pour the water into the bag of coconut and seal shut. Knead the bag to evenly distribute the green food coloring onto the coconut. Set aside.
3. To create the body of the bunny, cut one cake round in half. Frost one section and press it together.
Place the flat side onto a cutting board and cut off about ¼ of the end to create the head.
4. Add frosting to a plate and place the body onto the frosting in the plate.
5. Trim the head piece as shown and attach to the body of the cake on the plate with frosting.
6. With the other cake round, cut ⅓ of the end and then cut in half to create 2 hind quarters. Add frosting to one side of the cut piece of cake and attach to the body on the plate. Repeat for the other side.
7. Frost the entire bunny cake with white frosting and sprinkle with white coconut, pressing it into the sides as necessary to cover.
8. Spoon green coconut onto the plate for grass. Add jelly bean piles to the grass and add black eyes and a pink nose to the bunny. Use black gel to add whiskers.
9. Use scissors to cut paper into an ear shape. Fold the ear in the center to crease and tuck into the top of the bunny’s head. If necessary add a small knife slit into the top of the head to accommodate the ears.
