We love making a big breakfast on the weekends. We are so busy during the week, that we make a point sitting down as a family and having breakfast together. French toast is always requested by my family.

How to Make French Toast Muffins
Step 1 – Prepare the Bread – Chop up the bread into cubes the size of bite size pieces. Set aside.
Step 2 – Grease Muffing Pan – Spray 12 muffins tins with non stick cooking spray. In a large mixing bowl mix together half the sugar, vanilla , egg, milk with a pastry blender.
Step 3 – Add Bread – Mix in the cubed bread in the bowl. Use your hands and get dirty.
Step 4 – Making the Cinnamon Topping – In a separate small bowl add 2 tablespoons sugar and 1 teaspoon cinnamon. Mix well.
Step 5 – Add to Muffin Pan – Spoon half of the wet bread mixture into the 12 muffin cups.
Step 6 – Add the Topping – Top with ½ teaspoon cinnamon sugar topping. Spoon remaining wet egg mixture and bread into the 12 muffin cups and ½ teaspoon cinnamon sugar mixture on top of the muffin.
- Step 7 – Bake Muffins – Bake in a preheated oven at 350 degrees for about 15 – 20 minutes or until golden brown. Some ovens may require 30 minutes.
- Step 8 – Add your favorite Toppings – Serve with maple syrup, butter, powdered sugar, or any other of your favorite toppings.

- Powdered Sugar – We love to top the muffins with powdered sugar and syrup but this is optional.
- Bread Options – When preparing your bread, use about 10 slices plus one heel then cut into chunks. You could even use old stale bread. Another option is to use different types of bread for different flavors or french bread.
- Keeping it Moist – If you are afraid if your muffins drying out, you can add some melted butter to the top.
- Milk Substitute – If you prefer you can use heavy cream instead of milk.
- Change the Topping – You can also mix brown sugar, vanilla and cinnamon together rather than white sugar. Make a streusel topping with cinnamon and salt and sugar.
- Muffin Pan Recommendation – My favorite cupcake pan is this one from Wilton. You can also use a mini muffin pan to make these into min muffins. If you do use the mini muffin pan, just remember to cut the baking time in half. I also love my silicone muffin pan for muffins. It is so convenient and clean up is a breeze.

It is best to make this recipe with almost stale bread. If your muffins turn out soggy, it could be that your bread was to fresh. Also, be careful how much egg mixture you spoon in the muffin tin. If to much, that could also make the muffins become soggy.

Ingredients

- 1 1/2 cups milk
- 4 tbsp sugar (divided in half)
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
Instructions

- In a large bow mix together half the sugar, milk, eggs, and extract.
- Mix in the bread in the bowl. Use your hands and get dirty.

- Spoon half of the wet bread into the 12 muffin cups
- Top with ½ teaspoon cinnamon sugar mixture.
