We love making copycat recipes at home. My kids love going to Taco Bell for the delicious cheesy potato cubes. The potatoes are seasoned perfectly with simple ingredients. Then topped with nacho cheese sauce and sour cream for a easy side.

We deep fried these seasoned potatoes in a large skillet. But you can also bake them in an oven on a baking sheet. We have even placed in an air fryer basket to air fry them.

What Makes these Potatoes so Good?

These potatoes are so good because of the many ways your serve them. You can even use leftover potatoes or make spicy potatoes by adding jalapenos or hot sauce.

This would be a great side dish to serve to a crowd and set out many different toppings. You can even turn these Fiesta Potatoes into Spicy Potato Tacos.

How to Make Taco Bell Cheesy Fiesta Potatoes

Step 1 – Prepare Potatoes – Wash potatoes.  Peel the potatoes and cut them into 1/4-½ inch cubes.  Dry the potatoes as much as possible with a paper towel.

Step 2 – Combine Seasoning – Add the flour, onion powder, garlic powder, paprika, cayenne pepper and salt to a large ziplock bag.  Seal and shake to combine the ingredients.

Step 3 – Coat Potatoes – Add in the potatoes.  Seal and gently toss to coat the potatoes with the flour mixture.

Step 4 – Remove Potatoes from seasoning – Remove the diced potatoes, shake off any excess flour and add to the oil. Fry for 10-12 minutes until the potatoes are golden brown. 

  • Step 5 – Place potatoes in bowls – Place the potatoes evenly into 4 separate bowls.  
  • Step 6 – Heat Cheese – Heat the nacho cheese sauce and drizzle it on the top of the potatoes. 
  • Step 7 – Serve and Enjoy – Then top with sour cream and green onions and they are ready to serve and enjoy.

Recipe Tips

  • Cooking Potatoes – Fry potatoes until they are fork tender and nice and crispy. We cooked our potatoes with vegetable oil but you can also use olive oil.
  • Coating Potatoes – We used a zip lock bag to coat the potatoes. But you can also mix everything in a large mixing bowl. Just make sure potatoes are fully coated with seasoning.
  • Drain Potatoes – Once you have fried the potatoes, make sure to drain on paper towels on a wire rack.
  • Seasoning – Feel free to change the seasoning to the Fiesta Potatoes. You can toss the potatoes in taco seasoning for added flavor.
  • Placing Potatoes in the Skillet – When placing the potatoes in the skillet do not overcrowd the pan. Just place the potatoes in a single layer which helps to evenly cook the potatoes.
  • Wrap in a Tortilla – Wrap the potatoes in a flour tortilla for a delicious veggie burrito. Add your favorite toppings for a fiesta potato burrito.

The best potatoes to use for this recipe is Russet Potato. But you can easily use Yukon Gold Potatoes or Red Potatoes. We have even used leftover fried potatoes.

How to Store Leftovers Cheesy Fiesta Potatoes

The potatoes will get soft as they are stored. But you can refrigerate the leftovers in an air tight container for up to 5 days. I would store the potatoes separately from the toppings to prevent the potatoes from being soggy.
To make the crispy again, place in the air fryer for a few minutes.

Does Taco Bell Still have Cheesy Fiesta Potatoes?

Yes, you can still get this side dish at Taco Bell. But we think this copycat taste better and making it at home saves you money.

Instructions

  • Wash potatoes.  Peel the potatoes and cut them into 1/4-½ inch cubes.  Dry the potatoes as much as possible with a paper towel.
  • Heat approximately 2 inches of oil in a large pot or deep fryer until the oil is approximately 350 degrees Fahrenheit.
  • Add the flour, onion powder, garlic powder, paprika, cayenne pepper and salt to a large ziplock bag.  Seal and shake to combine the ingredients.
  • Add in the potatoes.  Seal and gently toss to coat the potatoes with the flour mixture.
  • Remove the diced potatoes, shake off any excess flour and add to the oil.
  • Fry for 10-12 minutes until the potatoes are golden brown.  Remove from the oil and place on a plate lined with paper towels to soak up the excess oil.
  • Place the potatoes evenly into 4 separate bowls.
  • Heat the cheese sauce and drizzle it on the top of the potatoes.
  • Then top with sour cream and they are ready to serve and enjoy!
