This is my go-to dinner when I need a quick meal that everyone loves. It is ready in less than 20 minutes and is bursting with flavor.

Everyone can add their favorite toppings to make them their own. Serve them in a corn or flour tortilla for a meal that you can serve for any occasion.

Ingredients

  • Mexican Chorizo – We used Fresh Chorizo with casings removed
  • Small Corn Tortillas – We used street taco size flour tortillas or corn tortillas
  • Small White Onion, finely diced – Red onion can be used for a slightly milder, sweeter flavor.

The Chorizo is full of delicious spices, but feel free to add in a 1 teaspoon of spices for additional flavor. These are some simple additions.

How to Make 3 Ingredient Chorizo Street Tacos

  • Step 1 – In a large skillet over medium-high heat, cook the chorizo, breaking it up with a wooden spoon as it cooks, for about 8-10 minutes or until fully cooked and slightly crispy. You may need to add in a tablespoon of vegetable oil to prevent the chorizo from sticking in the pan.

  • Step 2 – While the chorizo is cooking on medium heat, warm the tortillas. Wrap them in a damp paper towel and microwave for 30 seconds, or heat them individually in a dry skillet for about 30 seconds per side.
  • Step 3 – To assemble, place a spoonful of cooked chorizo mixture on each warm tortilla and top with a sprinkle of diced onion. We even love to drizzle with a squeeze of fresh lime juice.

  • Chorizo Sausage – If the chorizo is very fatty, you may want to drain some of the excess fat after cooking.
  • Cooking Sausage – While you are cooking the sausage, use a wooden spoon to break the sausage into small pieces. The sausage is usually cooked within about 8-10 minutes.
  • Tortillas – For a classic street taco, heat the tortilla on your gas stove over open flame. This helps to burn the edges for even more flavor.
