The shredded chicken and cream cheese make an amazing combination. Not to mention the extra shredded cheese. We like to serve it with a side of Easy Spanish Rice.

Ingredients

  • chicken breast – chicken thighs would be delicious too.
  • cumin – Check out Best Substitute for Cumin if you are out.
  • garlic powder
  • chili powder
  • salt and pepper
  • water
  • cream cheese – cubed and softened
  • shredded cheese
  • flour tortillas

How to make Crock Pot Chicken Taquitos

First, get a small bowl and combine the cumin, garlic powder, chili powder, salt and pepper. Mix this together.

Second, put the chicken and the seasoning mixture in the crockpot. Add the water.

Next, cook on low for 4 hours. Once the chicken is finished cooking, take it out of the slow cooker and shred with 2 forks.

The chicken will be so tender and very easy to shred.

Mix the cream cheese and part of the shredded cheese with the chicken.

Keep stirring until the cheese is melted. The chicken will be warm and help the cheese to melt.

How to make chicken taquitos:

Finally, heat the tortillas up and spread the chicken mixture on each tortilla. Sprinkle with cheese and roll the tortilla up.

It is super easy and you can get the kids to help. We love to make these and the entire meal comes together very quickly without much effort.

  • Cook on low for 4 hours.
  • Remove chicken from slow cooker and shred with 2 forks.
  • Mix with cream cheese and ¼ cup shredded cheese.
  • Warm flour tortillas and spread a small amount of chicken mixture onto the tortillas.
  • Sprinkle with remaining cheese Roll up.
  • Serve with additional toppings such as sour cream, salsa and avocado.
