  • Pancake Batter – We love making our pancakes for scratch, but you can easily use a box pancake mix if you prefer. You can still stir in your chopped strawberries after combining the ingredients.
  • Change the Fruit – We used fresh strawberries but you can also use bananas or blueberries.

Step 1 – In a large bowl, whisk together the flour, sugar, baking powder, and salt.

Step 2 – In another medium bowl, combine the milk, beaten egg, melted butter, and vanilla extract.

Step 3 – Make a well in the center of the dry ingredients and pour in the wet ingredients. Stir until just combined. It’s okay if the batter has small lumps; do not over mix.

Step 4 – Gently fold the chopped strawberries into the batter.

  • Step 5 – Heat a large non-stick skillet or griddle over medium heat. Brush with a little melted butter to prevent sticking.
  • Step 6 – Pour ¼ cup of batter onto the skillet for each pancake in a single layer. Cook until you see bubbles forming on the surface and the edges starting to look set, about 2-3 minutes.
  • Step 7 – Flip the pancakes carefully and cook for another 2-3 minutes, or until golden brown and cooked through.
  • Step 8 – Serve the pancakes hot, garnished with extra fresh strawberries and drizzled with maple syrup, strawberry syrup or honey. You will love the way they taste.
