Mexican chicken soup recipe is a family favorite and it screams comfort food! I love that I can use leftover chicken in this recipe and the veggies give it a ton of flavor.

It is perfect for a cold day but so delicious we enjoy it year round. This recipe is freezer friendly and perfect to feed a crowd.

Ingredients for easy Mexican chicken soup:

  • 2 Boneless Chicken Breasts, Diced
  • 6 cups Chicken Broth (See Chicken broth substitutes)
  • ½ Onion, Diced
  • 2 Stalks Celery, Diced
  • 2 Carrots, Peeled and Diced
  • 1 cup Frozen Corn
  • 1 Tbsp Olive Olive
  • 2 tsp Minced Garlic
  • 1 can Diced Tomatoes with Green Chiles (14.5 oz.)
  • 1 Jalapeño Pepper, Seeded and Diced
  • 2 tsp Cumin
  • 1 tsp Ground Coriander
  • ½ tsp Salt
  • ½ tsp Pepper
  • 2 Tbsp Fresh Cilantro, Chopped
  • 1 cup Sour Cream (for Topping)
  • Tortilla Strips (For Topping)

How to make Mexican chicken soup in 30 minutes:

Heat the olive oil in a large pan over medium heat.  Add in the onion, celery and carrots.

Cook, stirring occasionally, until the vegetables are softened and tender (approximately 7-10 minutes).

Push the carrots and onions to one side of the pan and then add in the chicken and seasonings (coriander, cumin, salt and pepper).

Cook for approximately 4-6 minutes on each side until the chicken is slightly browned. Add in the broth, tomatoes, jalapeño and corn.

Bring to a boil, reduce the heat and simmer for approximately 20 minutes.

Then stir in the fresh cilantro. Serve topped with the sour cream and tortilla strips.  Enjoy!

Time saving tip:

We keep diced onion and bell pepper in the freezer so it is easy to add to any recipe we like. Another time saving tip is to use a small food chopper or food processor to quickly and easily chop the onions.

If you do not have one of these, I highly recommend them. They are such a time saver and you can get the veggies really fine if you have children that are picky.

I usually just chop the entire vegetable and freeze what I don’t need. It’s so nice to be able to just take the diced onion out of the freezer for recipes.

Mexican chicken soup is very easy to make and so frugal. While the chicken is cooking, I like to get the toppings out. It really is so quick and easy.

You can use chicken thighs, chicken breast or even leftover rotisserie chicken. It is so delicious! You can also use taco seasoning if you prefer instead of the individual seasonings.

Recipe Notes

You can easily freeze this recipe to reheat for later. I like to freezer them in individual servings. Just make sure not to freezer tortilla strips in the soup as they will get soggy.
