Delicious Cilantro Lime Rice

My kids love rice! If I make plain white rice, they respond… “You made my favorite rice!” Really? Plain white rice is their favorite? Well, plain white rice isn’t my favorite, so I decided to jazz it up a bit. With a bit of hesitancy, I amazed myself. This rice is delightful and definitely going to be a regular here.

The best part… it is practically just plain white rice. If you can boil rice, you can make this recipe.

Cilantro Lime Rice

Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes

Cilantro Lime Rice

Ingredients

  • 3 cups dry rice
  • 6 cups water
  • 1/2 tablespoon garlic salt
  • 1 lime
  • handful of cilantro -chopped

Instructions

  1. In a medium size pot, combine 3 cups rice with 6 cups water. Bring to a boil.
  2. Once you have a boil, reduce heat and cover. Let simmer for 20 minutes.
  3. Remove from heat. Add garlic salt and chopped cilantro.
  4. Squeeze the lime over rice. Stir.
  5. Add lid and let sit for 5 minutes. Season with salt and pepper and serve.
  6. ** This is a double recipe. It will make a lot of rice. I do this, because you can then freeze the rest so you have an easy side dish later.

The results: My kids were mad at my that I put “green stuff” in their beloved white rice. My husband and I however were in love! ;)
