Easy Marshmallow Cornflakes Bars:

These easy cinnamon cornflake squares are the best chewy, gooey marshmallow sweet treat bars. They are the perfect treat any day of the week.

The recipe is very quick and easy. They are great for dessert, after school snacks and more! You kids will love them in their lunchbox.

Pre-packaged treats can really add up. Save money by making a batch of these and putting them in ziplock bags.

They will be ready to pop into lunch boxes or grab for a quick snack. This yummy cinnamon cornflake squares recipe does not disappoint!

What can you add?

I love using what I already have in my pantry and sometimes that means trying new things. Here are some of our favorite add-ins:

  • Chocolate Chips – Mini Chocolate chips are our favorite
  • Peanut Butter – Add in crunchy peanut butter or creamy peanut butter. Peanut Butter Corn flake treat sounds like a perfect combination. Or crunch bars would be great with crunchy peanut butter.
  • Peanut Butter and Chocolate Chips – Make Chocolate Peanut Butter Cornflake Bars
  • Nuts – Sliced almonds or peanuts would add in some extra crunch
  • Seasonal Marshmallows – Adding in seasonal marshmallows will make these treats festive for any occasion.
  • M&Ms – You can add in some M&M’s. You can mix in for the holiday – Red & Green for Christmas, Pastels for Easter, or Red for Valentines.

If you do not have enough corn flakes you can mix in some rice krispies to make this recipe. You can even make these cereal bars gluten free with the base recipe. The corn flakes bars marshmallows are the best treat.

Change up the cornflakes:

The possibilities are endless! You can take this recipe and make corn flakes squares a ton of different ways. They will be great using frosted flakes instead of plain corn flakes. Chocolate Frosted Flakes taste amazing too! 

The no bake bars are always a hit all around. Do you have a chocolate lover in your house? You could make chocolate corn flakes.

If it is too much chocolate for you, try mixing in a few plain corn flakes with the chocolate frosted flakes. This will cut down on sugar and help with the sweetness.

Ingredients for Cornflake Squares:

All you need is easy ingredients to make these Cornflake Squares. Some recipes call for sugar and corn syrup but it is not necessary to make these easy bars.

  • Cornflakes
  • Butter
  • Marshmallows
  • Cinnamon

How to make Cornflake Bars Marshmallows:

  • Line an 8-inch square baking pan with parchment paper or spray with non stick spray.
  • Melt the butter, marshmallows and peanut butter in a large microwave safe bowl. Heat it in 30 second increments and stir between each one until fully meted.

  • Mix in the cinnamon.

  • Then mix in the cornflakes until they are coated. Using a butter spatula helps make sure the cornflakes are mixed well.

  • Press firmly into the into the prepared pan, but not to push to firmly as you don’t want to crush the cornflakes. The cornflake bars marshmallow mixture will be sticky. I use the butter spatula to make sure it is pressed into the pan.
  • Make sure you let cool completely. Next, lift out and cut into squares. When using parchment paper it makes it easy to lift out of pan and cut into squares.
  • This recipe makes 16 small squares or about 9 large squares. You can even use a disposable pan to make clean up a breeze. I’m all for making things easy around here.

These are perfect to make for your gift giving this holiday season. You family and friends will love them on their cookie trays. You can even take them for a cookie exchange party.

Can these be made on the stove top?

Yes, these can be made on the stovetop instead of the microwave. Melt the marshmallows and butter in a large sauce pan over low heat.

Stir until melted and well combined. Remove from heat and then mix in the cinnamon and corn flakes. Then pressure the mixture into the pan.

How to store Cinnamon Cornflake Squares:

These cornflake bars are easy to make and easy to store. Store in an airtight container at room temperature. They don’t last long in my house but are perfect to keep for an easy snack. Do not store in the refrigerator or they will become dried out and loose their gooey texture.

Instructions

  • Line an 8-inch square baking pan with parchment paper or spray with non stick spray.
  • Melt the butter and marshmallows in a large microwave safe bowl. Heat it in 30 second increments and stir between each one until fully meted.
  • Mix in the cinnamon and then gently stir in the cornflakes until they are well coated.
  • Press the mixture evenly into the pan. Let cool completely, then lift out and cut into approximately 9 squares.

*Let these sit at room temperature to set.ย  I find that placing them in the refrigerator will dry them out and make them not as gooey.ย ย 
*Store any leftovers in an air tight container for up to 1 week.ย ย

    I don’t recommend freezing these. I find that the marshmallows great crisp and crunchy after this has been frozen and I prefer them to be gooey!
